Sanitary Exhaust System – Bakery Expansion
The Challenge
A commercial bakery was expanding production capacity by adding a new oven line. The expansion required exhaust ductwork for the new oven, makeup air ductwork to replace exhausted air, sanitary stainless steel construction to meet food-safe requirements, and installation during limited production downtime with only Sundays available for installation work.
Our Solution
We fabricated all ductwork from 304 stainless steel with smooth interior welds for sanitary design. The system included cleanable access doors, sloped drainage sections, and washdown-compatible construction. Installation was scheduled over four consecutive weekends to minimize production impact. We coordinated with the oven manufacturer and controls contractor for seamless integration.
Results
All ductwork installed and tested on schedule for equipment commissioning. Stainless ductwork met food-safe requirements and washdown compatibility. Weekend installation schedule allowed the bakery to maintain production on existing lines.
